Late summer is primetime for vegetables. The corn is plentiful and sweet, the tomatoes are bursting with flavor, and orchard fruits are bridging the span between seasons. In this gluten-free class, veggie impresario Ric Orlando will orchestrate a symphony of flavors for a memorable meal, including:


- Late tomatoes and tofu, Japanese-style


- Sweet corn risotto


- New World Home Cooking classic kale salad with curried cashews, chevre and apple chutney


- Marsala poached pears

About Ric: Chef Ric Orlando is a former rocker-turned-chef who is best known for his New World Home Cooking restaurant and oversees the kitchen at New World Bistro Bar, in Albany. He is a cookbook author, radio personality, and former TV host. He is often referred to as, "the pioneer of Hudson Valley farm-to-table."
