Winter Squash Mania

Summer is over and winter squashes are flooding the farmers market. From acorn and blue hubbard to pumpkin and butternut, the array of winter squash is a great starting point for recipes from around the world. Take this global squash tour with Ric Orlando, who will show students how to make:

- Pumpkin fritters fra diavolo (Italy)

- Red curry butternut squash (Thailand)

- El Locro (braised beef, corn and mixed squash) (Peru)

- Calabazo Dulce (spiced candied pumpkin) (Mexico)

About Ric: Chef Ric Orlando is a former rocker-turned-chef who is best known for his New World Home Cooking restaurant and oversees the kitchen at New World Bistro Bar, in Albany. He is a cookbook author, radio personality, and former TV host. He is often referred to as, "the pioneer of Hudson Valley farm-to-table."
