March is culinary doldrum season, with winter vegetables fading and spring yet to come. That doesn’t mean your cooking has to be dull! Have some fun with Chef Ric Orlando and get creative with stuffing fungi, veggies, seafood and pancakes to keep minds and taste buds excited. Recipes include:


- Mushroom-stuffed mushrooms


- Sicilian “dirty rice”-stuffed calamari with agrodolce tomato sauce


- Stuffed radicchio salad


- Lemon-ricotta stuffed crepes

About Ric: Chef Ric Orlando is a former rocker-turned-chef who is best known for his New World Home Cooking restaurant and oversees the kitchen at New World Bistro Bar, in Albany. He is a cookbook author, radio personality, and former TV host. He is often referred to as, "the pioneer of Hudson Valley farm-to-table."
