Irish cooking has come a long way from iron pots on a hearth with boiled meat and boiled cabbage. The Emerald Isle has a terroir that bolsters the sweetness in their root vegetables and all the verdant hills for cows and sheep to graze. Icy seas make the salmon run with a pep in their step to give their fillets a lush pink hue. We can all appreciate what our modern cooking methods can do to rustic ingredients.
