Introduction to Sous-Vide

Modern cooking techniques and equipment have turned everyday ingredients into resplendent examples of fine cuisine. Sous vide -- the process of slowly cooking vacuum-sealed food in temperature-controlled water -- is a recent boon to food cookery, making steaks more tender, fish more flaky, and flavors more nuances. In this class, students will learn how to operate a Sous Vide machine to create:


- Infused butter


- Salmon


- Steak


- Creme brulee
